Aam Panna or Raw Mango Cooler

Aam Panna is a refreshing summer cooler made from green raw mangoes, sugar & assorted spices. Aam Panna is a tasty and healthy Indian drink renowned for its heat-resistant properties. It is made from green mangoes and is yellow to very light green in color. In most instances, mint leaves are added to enhance the flavour and green colour.

It quenches thirst and prevents the excessive loss of sodium chloride and iron during summer due to excessive sweating. This drink is mainly consumed in North India and is considered beneficial in the treatment of gastrointestinal disorders. It is also a good source of vitamin B1 and B2, niacin, and vitamin C.

INGREDIENTS:

  • 3 medium Green Raw Mangoes, peeled and thinly sliced
  • 1 cup Sugar
  • 10-15 Mint Leaves
  • 1 tbsp Cumin Powder
  • 1.5 tsp Black Salt (Kala Namak)
  • 2 tbsp Lemon juice
  • 1/8 tsp Pepper Powder (optional)
  • a pinch of Salt
  • Ice Cubes
  • Mint leaves and Lemon Slices to serve

 

INSTRUCTION:

  1. Peel the raw mangoes and slice them into small pieces, leaving out the seed.
  2. Pressure cook or boil the mangoes along with 2 cup water for 3-4 whistles or until the mangoes are very soft and almost dissolved in water.
  3.  Let it cool down a bit and then transfer the mixture to the blender.
  4. Add mint leaves, sugar, lemon juice, cumin powder, pepper powder and black salt. Blend to a smooth paste.
  5. Strain the liquid into a sauce pan. Bring it to a boil and then simmer for 3-5 mins. Check for the taste and adjust the seasoning now. The flavours should be strong.
  6. Once the syrup boils and thickens, remove from the flame. Store aam panna preserve in a clean bottle and refrigerate it once cool for later use.
  7. To serve, fill the glass 2/3rd with aam panna preserve and fill remaining with chilled water and ice cubes. Garnish with fresh mint leaves and lemon slices.
  8. I just added around 2-3 cup of chilled water to the whole aam panna preserve and served my guests.

 

Notes:

  • You can adjust the sugar as per your liking.
  • Aam panna preserve would stay good for 7-10 days when refrigerated.
  • You can use jaggery, honey or brown sugar instead of sugar in this recipe.
