This one is one of the quick and easy salad that i love. And trust me it tastes as good as it looks. 🙂 I had served this lovely salad as a side along with my Plum Glazed Grilled Chicken. But, you can also serve it as it is for a light lunch or serve it with some french bread or toss it along with some cooked pasta or use it as a filling for your tacos or wraps 😉 Yummm!!. .
1/2 cup Cherry Tomatoes (cut into half)
1 Avocado (remove pit – scoop – dice)
1 Cucumber (peel and diced)
1/4th cup Feta (crumbled)
2 tbsp Onion ( diced)
Few Springs of Coriander (chopped)
1/4 cup Olive Oil
1/8th cup Red Wine Vinegar
1 tbsp Sugar
1/4th tsp Pepper powder
1 Clove Garlic (minced)
Salt to taste
- Cut all the veggies and add to the bowl.
- Whisk together olive oil, vinegar, sugar, garlic, pepper and salt. Pour over the salad.
- Toss gently so that the feta and avocado don’t break and get too mushy.
- Serve immediately.
- If you have to refrigerate, then keep the avocado and feta aside and add them to the salad just before serving.
